zucchini teriyaki bowl



I was over at my sister-in-law's house the other day, and she made the most delicious lunch for me, and 

I thought I'd like to share it with you! Here is what you will need. 

3 zucchini's 
1/2 C. of frozen mixed veggies
1/3 C. of frozen edamame 
soy sauce (to taste)
1Tbs. unrefined coconut oil
teriyaki sauce (to taste)

First, cut off the ends of your zucchini, and spiralize that bad boy! Then put your coconut oil, and 

zucchini noodels in your electric skillet, or pan. And just keep them in long enough until they are a nice 

soft consistency. Add in some soy sauce to taste. Just keep tasting them until they taste good to you.







Next, you will separate them into a bowl, and in the same skillet, use the reserve soy and coconut oil to 

cook your mixed veggies. 


Then add in your teriyaki! I did about 2 Tablespoons, but it's up to you depending on your taste.


Then just mix it all together, and there you have it, DELICIOUS!

In February, Justin and I decided that we needed a good diet cleanse. So we started Whole30. And it 

was amazing! And since we have been off, I have been looking for recipes that we can eat (especially 

desserts.) and stay as close to Whole30 as possible, without breaking the bank. 

I think that we've programmed ourselves to believe the lie, "I'd love to eat healthy, but its just so 

expensive." Not always true. We have been trying really hard to live a more Paleo lifestyle the last 

couple months, and I have definitely seen a lot of health improvements in the both of us. So, since we 

are a one income family, it's not really an option to be on an "expensive" diet. Although, during 

whole30, I was slightly panicking when I saw that we were spending basically double the amount at 

the store as we normally would. But considering the fact that we couldn't eat out, AT ALL, by the end 

of the month, we had actually saved about $100 in fast food. Crazy right?

On top of which, if you are going to take the plunge into Paleo, it means a lot of meal prep, and a lot of 

cooking..like..a lot! So, these are my favorite easy, quick, "go-to" Paleo recipes!


1. Eggs, Bacon, and Potatoes


Its funny, because you would think that this is way too savory to have for breakfast. But it's not! And it 

is our FAVORITE breakfast. This makes enough for 2 people. 

2 eggs
2 pieces of Pedersons bacon
5 red potatoes

I just chop up about 5 tiny red potatoes, and put them in my electric skillet, with a couple tablespoons of 

olive oil, and salt and pepper. And then I cover them and let them cook until they are soft, about 5-

10min. (stirring occasionally) make 2 eggs over medium in some spray coconut oil. And then cook the 

bacon.

Simple enough, right?


2. Hamburgers with Egg and Guac!


We probably eat this 2 times a week. Its fast, filling, and has guacamole. What more do you need?
1 lbs hamburger meat
3 eggs
for guacamole:
1 avocado
small bunch cilantro
lime juice
jar sugar free salsa
1 small jalepeno
garlic salt


To start, just thaw out your hamburger meat, and then put it in a bowl with 1 egg yolk, and whatever 

seasonings you prefer (I just do salt and pepper). Once seasoned, put on your pan, or electric skillet and 

let them cook evenly on both sides.

Then make your guac! This is the recipe for my quick quacamole. You're not eating it with chips, so it 

doesn't have to be too perfect. I just put my avocado in a bowl with the ingredients listed above, to 

taste. I love putting a tablespoon or two of salsa into my guac, because it already has a lot of flavor, and 

most of the stuff you would put into guacamole anyways! 

Then make your eggs, and throw it on there! 

and Viola! Best lunch ever. 

Also, it's really good served with sweet potato fries and some of Amy's organic Ketchup. (also sugar 

free!)

Avocado Chocolate Paleo Tart


Of course being a "homemaker" I love entertaining, and with that always comes a new recipe! I 

especially love finding new healthy desserts to make. My family however hate it..there is an on going 

joke that my friends and family have. They always look at my desserts and say, "Ok, what's the weird 

thing you snuck in this?" To which I reply, "What?! Nothing! ---avocados."

I've found my new true love, aside from my husband, puppy and Miele vacuum. Two words.

 Avocado chocolate! 

Where have I been living? This stuff is amazing! 

So don't worry, I won't keep going on and on. I found this recipe on Pinterest from the blog Tastes 

Lovely! No kidding, I've made it 8  9, ok about 10 times. No one would ever believe it's Paleo. It is

unbelievably delicious!

Paleo Strawberry Crumb Dessert

This dessert is seriously so addicting! I have made it several times already, and am planning on making

it for 4th of July! This recipe is from the StephieCooks blog! So it's pretty obvious, I love the crumble

part the absolute most, so when I make it, I always do more.

And I love the coconut whip on top of it! Last time I was at Trader Joe's I just got a can of coconut

cream, and then only used half of the can with a little vanilla and maple syrup. And it was

AWESOME!

Paleo Key Lime Pie


Believe me, I wanted to get more pictures of this, but it wasn't around long enough to even get a

picture! It was so unbelievably delicious! super easy, and fast. You will not believe that this delicious

crust is only pecans, dates, and coconut. And this one is great because as much as we would like to

believe "Oh Paleo dessert! I can have as much as I want!" I felt like this when I discovered the Paleo

chocolate tart, but then I realized that I was essentially eating 1/2 C of maple syrup almost every time.

Yikes. So this one has hardly any sweetener, just honey and coconut milk. So major score for this

blogger that figured it out! Her blog is, Paleo Running Mama and it's such a fun read!


So there they are! I hope to be posting more of my favorite Paleo recipes soon, because there are a lot!

But here is some inspiration, to get you going! Being healthy doesn't have to take forever, or be crazy

expensive, it can be as easy and simple as you make it!
